- 6 bone-in, skin-on chicken thighs
- 1 tablespoon paprika
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Juice of 1 lemon
- 2 cups baby spinach
- 3 tablespoons butter (divided)
- 1 teaspoon fresh thyme or dried thyme
- 1/2 cup chicken broth
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- Heat 2 tablespoons butter in a large oven-safe skillet over medium-high heat.
- Place chicken skin-side down and cook until golden brown on both sides.
- Remove chicken and drain excess fat, leaving some in the pan.
- Add 1 tablespoon butter to the skillet.
- Stir in garlic and cook until fragrant.
- Pour in chicken broth, heavy cream, Parmesan, lemon juice, and thyme.
- Stir and bring to a boil, then lower heat to simmer.
- Add the spinach and cook until it wilts and the sauce thickens.
- Return the chicken to the skillet, skin-side up.
- Bake in a 400°F (200°C) oven for 25 minutes until the chicken is cooked through.
- Serve this creamy lemon butter chicken hot with the sauce spooned over the top.
