Creamy Pasta Tomatoes and Spinach

Description

Your dinner just got an upgrade with this delicious Creamy Pasta Tomatoes and Spinach recipe!


Ingredients

Units Scale
  • 1/2 lb of penne pasta
  • 1 chopped onion
  • 2 cloves garlic (minced)
  • 2 tbsp. Olive oil
  • 14 oz. can chopped tomatoes
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • A pinch of red pepper flakes
  • 1/2 tsp salt and ground pepper
  • 1/2 cup water
  • 2 tbsp. Tomato paste
  • 2 oz. cream cheese
  • 1/4 cup or a bit more of Parmesan cheese
  • 1/2 cup pasta water to sauce
  • 4 oz. fresh spinach

Instructions

  1. Bring the pot of water to a boil, add the pasta, and boil until cooked.
  2. While pasta is cooking, mix chopped onion, and minced garlic in a pan with olive oil.
  3. Cook this mixture for 3–4 minutes.
  4. Add the can of chopped tomatoes, dried oregano, dried basil, red pepper flakes, salt, and ground pepper.
  5. Then add the water, and tomato paste and combine until mixed through. 
  6. Lower the heat and continue to add the cream cheese in pieces.
  7. Whisk until blended.
  8. Now add Parmesan cheese and blend.
  9. At this point, add pasta water to the sauce, as well as the fresh spinach.
  10. Lastly, add the pasta and toss until coated. Serve warm.
