Description
Your dinner just got an upgrade with this delicious Creamy Pasta Tomatoes and Spinach recipe!
Ingredients
- 1/2 lb of penne pasta
- 1 chopped onion
- 2 cloves garlic (minced)
- 2 tbsp. Olive oil
- 14 oz. can chopped tomatoes
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- A pinch of red pepper flakes
- 1/2 tsp salt and ground pepper
- 1/2 cup water
- 2 tbsp. Tomato paste
- 2 oz. cream cheese
- 1/4 cup or a bit more of Parmesan cheese
- 1/2 cup pasta water to sauce
- 4 oz. fresh spinach
Instructions
- Bring the pot of water to a boil, add the pasta, and boil until cooked.
- While pasta is cooking, mix chopped onion, and minced garlic in a pan with olive oil.
- Cook this mixture for 3–4 minutes.
- Add the can of chopped tomatoes, dried oregano, dried basil, red pepper flakes, salt, and ground pepper.
- Then add the water, and tomato paste and combine until mixed through.
- Lower the heat and continue to add the cream cheese in pieces.
- Whisk until blended.
- Now add Parmesan cheese and blend.
- At this point, add pasta water to the sauce, as well as the fresh spinach.
- Lastly, add the pasta and toss until coated. Serve warm.
