Description
This creamy oat dessert is simple, comforting, and surprisingly satisfying. Enjoy it warm on a chilly evening or chilled straight from the fridge with a fresh fruit salad for a lighter finish.

- 3 cups milk
- 1/2 cup oats
- 3 to 4 whole cardamom pods, lightly crushed
- 2 cinnamon sticks
- 1/4 cup coconut
- Sugar, to taste
- 2 tbsp custard powder
- 1/2 cup cold milk
- 1/4 cup chunky mixed nuts, roughly chopped
- 1 banana, chopped
Instructions
- Pour 3 cups milk into a medium saucepan and add the 3 to 4 lightly crushed whole cardamom pods and 2 cinnamon sticks. Bring the milk to a gentle boil over medium heat.
- Stir in the 1/2 cup oats and 1/4 cup coconut.
- Reduce the heat and cook for about 10 to 15 minutes, stirring often, until the oats are tender and the mixture becomes creamy and thick.
- Add sugar to taste, stirring until completely dissolved. Taste and adjust the sweetness if needed.
- In a small bowl, whisk together the 2 tbsp custard powder and 1/2 cup cold milk until completely smooth with no lumps.
- Slowly pour the custard mixture into the hot oat mixture while stirring continuously.
- Continue cooking for another 2 to 3 minutes until the dessert becomes smooth, thick, and silky.
- If the mixture becomes thicker than you’d like, stir in a splash of extra milk until you reach your preferred consistency.
- Remove the saucepan from the heat and discard the cardamom pods and cinnamon sticks if preferred.
- Spoon the dessert into a serving dish or individual bowls.
- Scatter and mix in the 1/4 cup chunky mixed nuts (you can also add some as decoration) and top with the fruit just before serving.
- Serve warm for a comforting dessert or chill completely in the refrigerator and enjoy with a fresh fruit salad.
