Description

This creamy oat dessert is simple, comforting, and surprisingly satisfying. Enjoy it warm on a chilly evening or chilled straight from the fridge with a fresh fruit salad for a lighter finish.


Ingredients

  • 3 cups milk
  • 1/2 cup oats
  • 3 to 4 whole cardamom pods, lightly crushed
  • 2 cinnamon sticks
  • 1/4 cup coconut
  • Sugar, to taste
  • 2 tbsp custard powder
  • 1/2 cup cold milk
  • 1/4 cup chunky mixed nuts, roughly chopped
  • 1 banana, chopped

Instructions

  1. Pour 3 cups milk into a medium saucepan and add the 3 to 4 lightly crushed whole cardamom pods and 2 cinnamon sticks. Bring the milk to a gentle boil over medium heat.
  2. Stir in the 1/2 cup oats and 1/4 cup coconut.
  3. Reduce the heat and cook for about 10 to 15 minutes, stirring often, until the oats are tender and the mixture becomes creamy and thick.
  4. Add sugar to taste, stirring until completely dissolved. Taste and adjust the sweetness if needed.
  5. In a small bowl, whisk together the 2 tbsp custard powder and 1/2 cup cold milk until completely smooth with no lumps.
  6. Slowly pour the custard mixture into the hot oat mixture while stirring continuously.
  7. Continue cooking for another 2 to 3 minutes until the dessert becomes smooth, thick, and silky.
  8. If the mixture becomes thicker than you’d like, stir in a splash of extra milk until you reach your preferred consistency.
  9. Remove the saucepan from the heat and discard the cardamom pods and cinnamon sticks if preferred. 
  10. Spoon the dessert into a serving dish or individual bowls.
  11. Scatter and mix in the 1/4 cup chunky mixed nuts (you can also add some as decoration) and top with the fruit just before serving.
  12. Serve warm for a comforting dessert or chill completely in the refrigerator and enjoy with a fresh fruit salad.
