Description

These lovely little cupcakes have a soft, tender crumb with a delicate sweetness from golden syrup, making them a real treat for afternoon tea or a special occasion. Topped with freshly whipped cream or Ermine Cream, pretty wafer petals and colourful sprinkles, they’re just as delightful to look at as they are to eat!

Cupcakes

Topping

  • Frosting as per your own preference or Ermine Cream
  • Wafer petals or wafer decorations, as desired
  • Colourful sprinkles, as desired

Instructions

  1. Preheat your oven to 350⁰F (180⁰C). Line a 12-hole muffin or cupcake pan with paper cupcake liners.
  2. Place the softened butter or margarine and caster sugar in a mixing bowl. Beat until light, pale and creamy. This should take approximately 3 to 4 minutes with an electric mixer.
  3. Add the golden syrup and beat until incorporated. Add the eggs one at a time, beating well after each addition. If the mixture looks slightly curdled, don’t panic. It should come together when you add the flour.
  4. Sift the self-raising flour and baking powder together. Gently fold the dry ingredients into the butter mixture until just combined. Don’t overmix, as this can make your cupcakes heavy.
  5. Add the vanilla extract and milk. Fold gently until you have a smooth, soft cake batter.
  6. Divide the batter evenly between the 12 cupcake liners, filling each approximately two thirds full. This leaves enough room for the cupcakes to rise without overflowing.
  7. Bake for 18 to 22 minutes, or until the cupcakes have risen, look lightly golden and spring back when gently touched in the centre. Insert a toothpick into the middle of one cupcake. It should come out clean or with a few dry crumbs.
  8. Remove the cupcakes from the oven and leave them in the pan for about 5 minutes before transferring them to a wire rack. Allow them to cool completely before decorating.
  9. For the topping, make your desired topping, or use Ermine Cream and decorate with wafer petals and a generous sprinkle of colourful sprinkles.
  10. Serve straight away or refrigerate until ready to enjoy.
