Description
These lovely little cupcakes have a soft, tender crumb with a delicate sweetness from golden syrup, making them a real treat for afternoon tea or a special occasion. Topped with freshly whipped cream or Ermine Cream, pretty wafer petals and colourful sprinkles, they’re just as delightful to look at as they are to eat!
Ingredients
Cupcakes
- 110 g butter or margarine, softened
- 110 g caster sugar
- 25 ml – 2 tbsp golden syrup
- 2 large eggs, at room temperature
- 175 g self-raising flour
- 5 ml – 1 tsp baking powder
- 5 ml – 1 tsp vanilla extract
- 25 ml – 2 tbsp milk
Topping
- Frosting as per your own preference or Ermine Cream
- Wafer petals or wafer decorations, as desired
- Colourful sprinkles, as desired
Instructions
- Preheat your oven to 350⁰F (180⁰C). Line a 12-hole muffin or cupcake pan with paper cupcake liners.
- Place the softened butter or margarine and caster sugar in a mixing bowl. Beat until light, pale and creamy. This should take approximately 3 to 4 minutes with an electric mixer.
- Add the golden syrup and beat until incorporated. Add the eggs one at a time, beating well after each addition. If the mixture looks slightly curdled, don’t panic. It should come together when you add the flour.
- Sift the self-raising flour and baking powder together. Gently fold the dry ingredients into the butter mixture until just combined. Don’t overmix, as this can make your cupcakes heavy.
- Add the vanilla extract and milk. Fold gently until you have a smooth, soft cake batter.
- Divide the batter evenly between the 12 cupcake liners, filling each approximately two thirds full. This leaves enough room for the cupcakes to rise without overflowing.
- Bake for 18 to 22 minutes, or until the cupcakes have risen, look lightly golden and spring back when gently touched in the centre. Insert a toothpick into the middle of one cupcake. It should come out clean or with a few dry crumbs.
- Remove the cupcakes from the oven and leave them in the pan for about 5 minutes before transferring them to a wire rack. Allow them to cool completely before decorating.
- For the topping, make your desired topping, or use Ermine Cream and decorate with wafer petals and a generous sprinkle of colourful sprinkles.
- Serve straight away or refrigerate until ready to enjoy.

Additional Information, Tips and Suggestions
- Yield and cupcake size: This recipe makes approximately 12 standard cupcakes. Fill the liners about two-thirds full to allow room for rising.
- Butter or margarine: Either works well. Butter gives a richer flavour, while margarine produces a slightly softer crumb. Use softened butter and room temperature eggs for easier mixing.
- Golden syrup substitute: Honey can replace golden syrup, although it will give the cupcakes a different flavour. Golden syrup is preferable for the original taste.
- Why did my batter curdle? This can happen when cold eggs are added to softened butter. Use room temperature eggs and add them individually. A slightly curdled mixture should come together when the flour is folded in.
- How do I know they’re baked? The cupcakes should spring back when gently touched, and a toothpick inserted into the centre should come out clean or with a few dry crumbs. Avoid overbaking, as this can dry them out.
- Can I prepare them ahead? Bake the cupcakes a day ahead and store them undecorated in an airtight container at room temperature once completely cool.
- Fresh cream topping: Whip cold cream until it holds soft to medium peaks. Add icing sugar if you’d like extra sweetness. Avoid overwhipping, which can make the cream grainy. You can also use Ermine Cream
- Wafer decorations: Add the wafer petals shortly before serving. Moisture from the cream can soften them if left sitting for too long.
- Storage: Decorated cupcakes must be refrigerated in a covered container and are best enjoyed within 2 days. Don’t leave fresh cream cupcakes at room temperature for extended periods.
- Freezing: Freeze undecorated cupcakes in an airtight, freezer-safe container for up to 2 months for best quality. Thaw at room temperature, then decorate with freshly whipped cream, wafer petals and sprinkles.

Cupcakes with Wafer Petals offer a delicious combination of tender vanilla cake, delicate golden syrup sweetness and fluffy whipped cream. They’re easy to prepare, pretty to serve and simple to decorate with colourful sprinkles and wafer petals, making them a delightful choice for afternoon tea, birthdays or any occasion calling for a homemade sweet treat.
