Description

These Curried Chops are bold, simple, and unforgettable. Who would you serve them to?


Ingredients

  • 500g lamb or mutton chops
  • 1 onion, finely chopped
  • 1 tsp garlic and ginger paste
  • 2 tsp masala
  • 2 tomatoes, peeled and chopped
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin (jeera) powder
  • 1/4 tsp coriander (dhania) powder
  • Salt, to taste
  • 1 green pepper, chopped
  • Fresh coriander (Dhania), for garnish

Instructions

  1. Drop the tomatoes in boiling water for a minute or two, until the skin starts to split.
  2. Remove and peel off the skin. Chop them roughly.
  3. Blend the chopped tomatoes with the masala, turmeric, cumin, coriander powder, and 1 cup of water until smooth. Set aside.
  4. Heat a bit of oil in a pot.
  5. Add the chopped onion, garlic, and ginger.
  6. Cook until the onions are soft and translucent.
  7. Add the chopped green pepper and cook for about 15 minutes, until softened.
  8. Pour in your blended tomato and spice mixture.
  9. Stir well, cover the pot, and let it simmer for 5 minutes so the flavors come together.
  10. Place the chops into the pot. Stir to coat them in the sauce.
  11. Cover and cook for about 30 minutes, or until the meat is tender.
  12. Add a splash of water if the pot starts to dry out.
  13. Once the meat is soft and saucy, garnish with fresh chopped coriander. Serve hot with fluffy rice or warm roti.
