Curried Mince Cheese Jaffles

Description

Comfort food perfection: crispy bread, melty cheese, and curried mince. What are you waiting for?


Ingredients

Units Scale
  • 300-400g minced meat (beef, lamb, or chicken—your choice!)
  • 2-3 potatoes, quartered
  • 1 onion, chopped
  • 1 teaspoon crushed ginger & garlic
  • 2-3 curry leaves
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Masala or chili powder (adjust to your heat preference)
  • Salt to taste
  • Chopped coriander/Dhania (for garnish)
  • A splash of oil
  • 1 cup water (or as needed)


Instructions

  1. Heat a splash of oil in a pot over medium heat.
  2. Add the chopped onion, ginger, and garlic, and sauté until fragrant and golden.
  3. Toss in the curry leaves, cumin, coriander, and masala/chili powder. Stir well and let the spices bloom for a minute or two!
  4. Add your minced meat, breaking it up with the back of your spoon so it cooks evenly. 
  5. Add the potatoes, sprinkle in some salt, and pour in just enough water to help it cook.
  6. Cover and simmer on medium heat until the potatoes are fork-tender and the mince is juicy and flavorful.
  7. Finish with a sprinkle of fresh coriander. Your curried mince is ready!
  8. Scoop a generous portion of curried mince onto a slice of bread.
  9. Top it with shredded cheese, mozzarella, cheddar, or whatever you enjoy and have on hand.
  10. Place another slice of bread on top and toast it in a jaffle maker, or if you do not have one, you can use a panini press, or even a frying pan until golden brown and crispy.

The result? A crunchy, cheesy, handheld meal with a rich, spiced filling that’ll keep you coming back for more.

Bonus Tips:

Don’t overthink it! If the mince clumps or the potatoes take a little longer to cook, it’s all part of the process. Your jaffles will still taste fantastic.

Pair it up: Balance the spice with a side of fresh salad or a cooling yogurt dip. 

Get creative: Leftover curried mince? Use it as a topping for baked potatoes or stir it into cooked pasta for another quick meal.
