Crust

  • 1 sleeve of tennis biscuits or any other digestive biscuit

Filling:

  • 1 tin condensed milk
  • 3 tins of milk (use the condensed milk tin as measurement)
  • 37.5 ml sugar, I only use Berry sugar for baking (regular sugar will be fine).
  • 75 ml corn starch (Maizena)
  • 3 xl beaten eggs.
  • 12.5 ml butter. I prefer to use unsalted butter and not margarine.
  • 5 ml vanilla essence

Instructions

  1. Place biscuits on the bottom of your serving dish. I used Tennis biscuits, square shape, it fits perfectly in an oblong dish.
  2. Mix milk and condensed milk in a large microwave bowl, place in the microwave, and cook, say 2–3 minutes.
  3. Mix and blend the mixture of condensed milk to dissolve.
  4. Add sugar and mix through.
  5. Make a paste of the cornstarch and a bit of milk and add to the boiling milk mixture.
  6. Continue to stir and whisk to ensure no lumps are visible.
  7. Microwave at 2-minute increments until you have a thick consistency. This will depend on your microwave and if you made a single or double mixture.  
  8. I doubled the above recipe and made a huge and nice thick one, so it took me 10–15 minutes to get it nice and thick
  9. Remove from microwave, add whisked eggs and vanilla essence, and mix through.
  10. Return to microwave and bring back to boil, say 2-3 minutes
  11. Spoon over the biscuit mixture or if prefer in small tart casings.
  12. If using a regular tart-size plate, you will be able to make 2.
  13. See the image of the dish.
  14. Sprinkle with cinnamon.
  15. Place in fridge to set and serve once you can cut it.
  16. Super delicious. I will make this again and in the microwave as you only use ONE bowl.
