Crust
- 1 sleeve of tennis biscuits or any other digestive biscuit
Filling:
- 1 tin condensed milk
- 3 tins of milk (use the condensed milk tin as measurement)
- 37.5 ml sugar, I only use Berry sugar for baking (regular sugar will be fine).
- 75 ml corn starch (Maizena)
- 3 xl beaten eggs.
- 12.5 ml butter. I prefer to use unsalted butter and not margarine.
- 5 ml vanilla essence
Instructions
- Place biscuits on the bottom of your serving dish. I used Tennis biscuits, square shape, it fits perfectly in an oblong dish.
- Mix milk and condensed milk in a large microwave bowl, place in the microwave, and cook, say 2–3 minutes.
- Mix and blend the mixture of condensed milk to dissolve.
- Add sugar and mix through.
- Make a paste of the cornstarch and a bit of milk and add to the boiling milk mixture.
- Continue to stir and whisk to ensure no lumps are visible.
- Microwave at 2-minute increments until you have a thick consistency. This will depend on your microwave and if you made a single or double mixture.
- I doubled the above recipe and made a huge and nice thick one, so it took me 10–15 minutes to get it nice and thick
- Remove from microwave, add whisked eggs and vanilla essence, and mix through.
- Return to microwave and bring back to boil, say 2-3 minutes
- Spoon over the biscuit mixture or if prefer in small tart casings.
- If using a regular tart-size plate, you will be able to make 2.

- Sprinkle with cinnamon.
- Place in fridge to set and serve once you can cut it.
- Super delicious. I will make this again and in the microwave as you only use ONE bowl.
