- 175 g apricots
- 45 ml maple syrup
- 25 ml vanilla extract
- 25 ml lemon juice
- 10 ml poppy seeds
- A few fresh sprigs of thyme
- 1 Pomegranate Arils from 1 fruit (optional)
Instructions
- Wash and cut the fruit, then place it in a beautiful salad bowl.
- In a small bowl, mix the maple syrup, vanilla, lime juice, and poppy seeds and drizzle over the fruit.
- Gently toss everything together.
- Garnish with thyme and refrigerate for at least 1 hour before serving.
- Notes
- Use any fruit you may have available in the fridge. You can include diced apples, cherries, or bananas.
- Lemon juice helps keep the fruit fresh longer, but you can use any other citrus juice like orange, lemon, or pineapple for variety if you do not have lime or lemon juice
- Store any leftover fruit salad in the fridge for up to 2 days in an airtight container. Should you decide to use fruit like bananas, apples, pears, and peaches, you may wish to wait until you’re ready to serve the salad, to prevent them from turning brown.
- Serve with Berry Homemade Vegan Ice Cream
