Description
Make these pancakes using oats and bananas for natural sweetness and some Erythritol people with diabetes. Erythritol has no effect on glucose or insulin levels, so it makes it a safe sugar substitute if you have diabetes.

- 1 cup Oat Flour
- 1/3 cup Erythritol/Sugar
- 2 Teaspoons Baking Powder
- 1 Teaspoon Cinnamon
- 2 Bananas
- 1/2 Teaspoon Vanilla Extract
- 1 cup Milk
Instructions
- Place bananas in a bowl, pour in the vanilla, and mash till smooth.
- Add all the oat flour, erythritol, and all the other dry ingredients to a bowl.
- Add banana mixture to the dry ingredients, pour in the milk, and mix well to form a smooth batter.
- Cook in a non-stick pan, drizzle with honey, and enjoy!
Note:
These pancakes are rather soft so turn only once bubbles form on one side then flip.
- Oat flour can be made by blending original or quick-cooking oats in a food processor/stick hand blender till fine.
