Description

Fluffy Banana Loaf Without Eggs, Perfect for breakfast or a quick snack.

Instructions

  1. Cream butter and sugar until soft and fluffy.
  2. Mix in mashed bananas.
  3. Stir bicarbonate of soda into hot milk until frothy, then add to banana mixture.
  4. Add vinegar, salt, and sifted flour. Mix until just combined. Don’t overmix.
  5. Pour into a greased loaf tin (8×4 inch works well).
  6. Bake at 180C °C/350°F for 45–50 minutes, until a toothpick comes out clean.
  7. Cool in the tin for 10 minutes, then transfer to a wire rack. Slice once cooled.
  8. Storage: Keeps 3–4 days at room temperature, or freeze slices up to 2 months.
