Fluffy Banana Loaf Without Eggs, Perfect for breakfast or a quick snack.

- 125 g margarine (softened)
- 3/4 cup brown sugar
- 3 ripe bananas, mashed
- 1 tsp vinegar
- 1 tsp bicarbonate of soda
- 1/4 cup hot milk
- 2 cups self-raising flour
- 1/4 tsp salt
Instructions
- Cream butter and sugar until soft and fluffy.
- Mix in mashed bananas.
- Stir bicarbonate of soda into hot milk until frothy, then add to banana mixture.
- Add vinegar, salt, and sifted flour. Mix until just combined. Don’t overmix.
- Pour into a greased loaf tin (8×4 inch works well).
- Bake at 180C °C/350°F for 45–50 minutes, until a toothpick comes out clean.
- Cool in the tin for 10 minutes, then transfer to a wire rack. Slice once cooled.
- Storage: Keeps 3–4 days at room temperature, or freeze slices up to 2 months.
