Cake
- 1 cup of cake flour
- 1/2 tsp baking powder
- 1 tsp baking soda
- 6 tbsp cocoa powder
- 3/4 cup castor sugar
- 1/2 cup cooking oil
- 1/4 cup coffee (made by mixing 1 tsp instant coffee with 1/4 cup boiling water)
- 1/4 cup milk
- 1/4 cup plain yogurt
- 1 tsp vanilla extract
Simple Chocolate Icing
- 100g margarine (Rama works well)
- 1/3 cup cocoa powder
- 1 cup icing sugar
- 1 tsp vanilla extract
- 3 tbsp hot water
Instructions
Cake
- Heat the oven to 180°C /350°F and grease your cake tin.
- In a bowl, sift together the cake flour, baking powder, baking soda, cocoa powder, and sugar.
- Create a small well in the dry mix, then add the oil, coffee, milk, yogurt, and vanilla.
- Stir everything until smooth and well mixed.
- Pour the batter into the greased tin. Tap it gently to release any air bubbles.
- Bake for about 30 minutes. Check by poking with a toothpick; it should come out clean.
- Take it out and let it cool before decorating.
Simple Chocolate Icing
- Mix margarine and cocoa powder until smooth.
- Add hot water and stir well.
- Add icing sugar and vanilla, then mix until creamy.
- Spread over the cooled cake as much as you like.
