Description

Make eggless koeksisters in no time and enjoy a classic South African treat. Pair with coffee for the ultimate combo


Ingredients

Dough:

  • 4 cups sifted cake flour
  • 1 1/2 tsp ginger powder
  • 1 1/2 tsp mixed spice
  • 1 1/2 tsp cinnamon powder
  • 1 tsp clove powder
  • 1/4 tsp nutmeg powder
  • 2 tbsp sugar
  • 1 packet instant yeast (Anchor recommended)
  • Pinch of salt
  • 3 1/2 tbsp cooking oil
  • 2 cups lukewarm water
  • Small blob of Rama margarine

Syrup:


Instructions

  1. In a large bowl, mix sifted flour with all spices, sugar, yeast, and salt.
  2. Add margarine and rub it into the dry mix until evenly combined.
  3. Stir in oil and lukewarm water to form a soft dough.
  4. Knead for 10 minutes until smooth, elastic, and slightly tacky.
  5. Cover with cling wrap and let rise in a warm spot for 1 hour.
  6. Knock back the dough onto a floured surface, break into medium pieces, and roll into oval balls.
  7. Let rise for 5 minutes.
  8. Heat oil until hot. Fry dough balls until golden brown, then drain on paper towels.
  9. Boil water and sugar until thick and sticky.
  10. Adjust consistency with a splash of water if too thick.
  11. Dip the koeksisters in warm syrup, turning to coat evenly.
  12. Sprinkle and cover with coconut.
  13. Let cool slightly, then enjoy with coffee or tea.
