Dough:
- 4 cups sifted cake flour
- 1 1/2 tsp ginger powder
- 1 1/2 tsp mixed spice
- 1 1/2 tsp cinnamon powder
- 1 tsp clove powder
- 1/4 tsp nutmeg powder
- 2 tbsp sugar
- 1 packet instant yeast (Anchor recommended)
- Pinch of salt
- 3 1/2 tbsp cooking oil
- 2 cups lukewarm water
- Small blob of Rama margarine
Syrup:
- 2 cups water
- 2 cups sugar (adjust if too thick)
- Desiccated coconut for coating
Instructions
- In a large bowl, mix sifted flour with all spices, sugar, yeast, and salt.
- Add margarine and rub it into the dry mix until evenly combined.
- Stir in oil and lukewarm water to form a soft dough.
- Knead for 10 minutes until smooth, elastic, and slightly tacky.
- Cover with cling wrap and let rise in a warm spot for 1 hour.
- Knock back the dough onto a floured surface, break into medium pieces, and roll into oval balls.
- Let rise for 5 minutes.
- Heat oil until hot. Fry dough balls until golden brown, then drain on paper towels.
- Boil water and sugar until thick and sticky.
- Adjust consistency with a splash of water if too thick.
- Dip the koeksisters in warm syrup, turning to coat evenly.
- Sprinkle and cover with coconut.
- Let cool slightly, then enjoy with coffee or tea.
