Instructions

  1. Sift 5 cups of self-raising flour into a big mixing bowl. Don’t skip this step, as it keeps your scones light and airy.
  2. Pour in 250ml of fresh cream and 330ml of Sprite. Yeah, Sprite! It gives your scones a nice lift and keeps them soft.
  3. Grab a knife (or a spatula if you prefer) and mix everything until it comes together.
  4. Turn the dough out onto a lightly floured surface.
  5. Give it a gentle knead for about 5 minutes. You don’t want to overwork it; just enough to bring it together.
  6. Roll the dough out to about 2cm thick, then cut out scones using a circle cookie cutter or a cup.
  7. Don’t worry if the edges aren’t perfect.
  8. Place the scones on a baking tray lined with parchment paper.
  9. Bake in a preheated oven at 180°C (350°F) for 10–15 minutes, or until the tops are golden brown.
  10. Serve hot with cream, cheese, jam, or whatever makes you happy.
  11. Pair it with a nice mug of coffee or tea and enjoy!
