A delightful twist on a classic favorite: Tasty Fruity Chicken Curry.

- 750ml Freshly Cooked Rice
- 40g Butter /Margarine
- 20 ml Oil
- 6 Chicken Portions
- 2 Onions, Thinly Sliced
- 1 Clove Garlic Crushed
- 1 Apple Chopped
- 30 ml Flour
- 20ml Curry Powder
- 2 ml Ground Ginger
- 2 ml Ground Cinnamon
- 250 ml Chicken stock
- 25 ml Mango Chutney
- 15 ml Tomato Paste
- 30 ml Lemon Juice
- 4 Canned Peach Halves Drained & Halved
- 2 Bananas Thickly Sliced
- 2 slices Pineapple, Quartered
Instructions
- Heat the Butter and the Oil in a Frying pan and fry chicken joints until crisp and golden
- Remove from the Pan
- Add the Onions, Garlic and chopped Apple to the pan and fry, gently, until soft
- Sprinkle on the Flour, curry powder, ginger and stir and cook for 1 minute
- Gradually blend in the Chicken Stock and to boil
- When the Sauce Thickens, add the Mango Chutney and Tomato paste and season to taste
- Return chicken to the pan, reduce heat, and cover & simmer for 50 minutes until chicken is tender
- Add the lemon juice and the canned fruit & heat through
- Serve on rice and or with naan bread
