Description

A delightful twist on a classic favorite: Tasty Fruity Chicken Curry.


Ingredients

Units Scale
  • 750ml Freshly Cooked Rice
  • 40g Butter /Margarine
  • 20 ml Oil
  • 6 Chicken Portions
  • 2 Onions, Thinly Sliced
  • 1 Clove Garlic Crushed
  • 1 Apple Chopped
  • 30 ml Flour
  • 20ml Curry Powder
  • 2 ml Ground Ginger
  • 2 ml Ground Cinnamon
  • 250 ml Chicken stock
  • 25 ml Mango Chutney
  • 15 ml Tomato Paste
  • 30 ml Lemon Juice
  • 4 Canned Peach Halves Drained & Halved
  • 2 Bananas Thickly Sliced
  • 2 slices Pineapple, Quartered

Instructions

  1. Heat the Butter and the Oil in a Frying pan and fry chicken joints until crisp and golden
  2. Remove from the Pan
  3. Add the Onions, Garlic and chopped Apple to the pan and fry, gently, until soft
  4. Sprinkle on the Flour, curry powder, ginger and stir and cook for 1 minute
  5. Gradually blend in the Chicken Stock and to boil
  6. When the Sauce Thickens, add the Mango Chutney and Tomato paste and season to taste
  7. Return chicken to the pan, reduce heat, and cover & simmer for 50 minutes until chicken is tender
  8. Add the lemon juice and the canned fruit & heat through
  9. Serve on rice and or with naan bread
