Scale
- 3 cloves garlic, minced
- 1/3 cup olive oil
- 1/4 cup tomato sauce
- 2 tbsp red wine vinegar
- 2 tbsp fresh basil, chopped
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 2 lb fresh shrimp, peeled and deveined (tails on or off, your call)
- Skewers (wooden or metal)
Instructions
- In a medium bowl, stir together 3 cloves minced garlic, 1/3 cup olive oil, 1/4 cup tomato sauce, 2 tbsp red wine vinegar, 2 tbsp chopped fresh basil, 1/2 tsp salt, and 1/4 tsp cayenne pepper until it looks nicely blended.
- Add the 2 lb peeled and deveined shrimp to the marinade and toss until everything is coated.
- It’s best to cover and let it sit in the fridge for about 20 to 30 minutes.
- If you’re using wooden skewers, soak them in water for at least 10 minutes so they don’t burn.
- Thread the shrimp onto the skewers, not too tightly, so the heat can get around them.
- Preheat your grill. Lightly oil the grill grate so nothing sticks.
- Place the skewers on the grill and cook for 2 to 3 minutes per side. You’ll know they’re ready when the shrimp turn pink and slightly firm with a bit of char.
- Remove from the grill and let them rest for a minute or two. S
- Serve right away while they’re still juicy.
