Description

Garlic Grilled Shrimp Skewers made with a tangy tomato marinade, fresh basil, and garlic. A quick and flavourful grilled shrimp recipe ready in minutes.


Ingredients

  • 3 cloves garlic, minced
  • 1/3 cup olive oil
  • 1/4 cup tomato sauce
  • 2 tbsp red wine vinegar
  • 2 tbsp fresh basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 lb fresh shrimp, peeled and deveined (tails on or off, your call)
  • Skewers (wooden or metal)

Instructions

  1. In a medium bowl, stir together 3 cloves minced garlic, 1/3 cup olive oil, 1/4 cup tomato sauce, 2 tbsp red wine vinegar, 2 tbsp chopped fresh basil, 1/2 tsp salt, and 1/4 tsp cayenne pepper until it looks nicely blended.
  2. Add the 2 lb peeled and deveined shrimp to the marinade and toss until everything is coated.
  3. It’s best to cover and let it sit in the fridge for about 20 to 30 minutes.
  4. If you’re using wooden skewers, soak them in water for at least 10 minutes so they don’t burn.
  5. Thread the shrimp onto the skewers, not too tightly, so the heat can get around them.
  6. Preheat your grill. Lightly oil the grill grate so nothing sticks.
  7. Place the skewers on the grill and cook for 2 to 3 minutes per side. You’ll know they’re ready when the shrimp turn pink and slightly firm with a bit of char.
  8. Remove from the grill and let them rest for a minute or two. S
  9. Serve right away while they’re still juicy.
