Description

Green Bean Stew Bredie is the comfort meal you’ll crave all week. Perfect with rice for dinner.


Ingredients

  • 3 large onions, chopped
  • 600 g lamb pieces (on the bone if possible)
  • 1 tsp salt
  • 1 tsp crushed chilies (or to taste)
  • 1 tsp black pepper
  • Water, enough to cover and simmer meat
  • 4-5 potatoes, peeled and cut into chunks
  • 1 kg green beans, cleaned and cut
  • 1-2 tbsp sugar (optional, to balance flavor)
  • 1 cup white rice (cook as usual to serve)

Instructions

  1. Heat a heavy pot and fry the onions until golden brown.
  2. Add lamb, salt, pepper, garlic, and crushed chilies. Stir until meat is sealed.
  3. Add a little water at a time, cover, and simmer gently until the lamb is tender (about 45–60 minutes).
  4. Add potatoes, about 20 minutes before the end of your cooking time (#3), and cook until soft but not falling apart.
  5. Stir in the green beans, add more water if needed, and let everything cook together until beans are soft and flavors blend (about 20–25 minutes).
  6. Taste and add a spoonful of sugar if you’d like a touch of sweetness.
  7. Serve hot with fluffy white rice.
