Description

Grilled Corn, Avocado & Tomato Salad with Honey-Lime Dressing: Fresh, colorful, and full of flavor, this easy salad is perfect for summer meals or a quick bite anytime.


Ingredients

For the Salad:

  • 1 pint of grape tomatoes
  • 2 ripe avocados
  • 2 cans (341 ml each), no salt/sugar added, sweet corn or 2 fresh ears of corn on the cob
  • A handful of fresh cilantro

For the Dressing:


Instructions

Salad

  1. Take off the husks and grill the corn for about 10 minutes over medium heat until it gets some charred spots (if using fresh).
  2. It should be tender but still crisp.
  3. Cut off the kernels and scrape the cob with the back of your knife to catch the juices. Let it cool.
  4. Slice the grape tomatoes in half.
  5. Dice the avocados.
  6. Chop the cilantro.
  7. In a large bowl, gently mix the corn, tomatoes, avocado, and cilantro.

  8. Pour the dressing over and toss softly, don’t mash the avocado. 

  9. Let the salad rest for 10–15 minutes so the flavors can soak in.

Dressing

  1. Whisk together lime juice, oil, maple syrup, garlic, salt, pepper, and cayenne in a small bowl until smooth.
