For the Salad:
- 1 pint of grape tomatoes
- 2 ripe avocados
- 2 cans (341 ml each), no salt/sugar added, sweet corn or 2 fresh ears of corn on the cob
- A handful of fresh cilantro
For the Dressing:
- Juice of 1 lime
- 3 tbsp vegetable oil
- 1 tbsp maple syrup
- 1 clove garlic, minced
- Sea salt and black pepper, to taste
- A pinch of cayenne pepper (optional, for a little heat)
Instructions
Salad
- Take off the husks and grill the corn for about 10 minutes over medium heat until it gets some charred spots (if using fresh).
- It should be tender but still crisp.
- Cut off the kernels and scrape the cob with the back of your knife to catch the juices. Let it cool.
- Slice the grape tomatoes in half.
- Dice the avocados.
- Chop the cilantro.
-
In a large bowl, gently mix the corn, tomatoes, avocado, and cilantro.
-
Pour the dressing over and toss softly, don’t mash the avocado.
-
Let the salad rest for 10–15 minutes so the flavors can soak in.
Dressing
- Whisk together lime juice, oil, maple syrup, garlic, salt, pepper, and cayenne in a small bowl until smooth.
Fresh, creamy, tangy, and just a little sweet, this is the kind of salad you’ll want to make on repeat.
