This fusion of classic Swedish technique with nutrient-packed sweet potatoes delivers taste and health benefits in every bite.
Ingredients

- 1 Sweet Potato
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Paprika
- 1 Teaspoon Dried Thyme
- Salt & Pepper to taste
- 1 Tablespoon Butter (melted)
- Olive Oil
- Sour Cream
Instructions
- Rinse the Sweet Potato and pat dry.
- Cut slices into the potato almost all the way through, but stop before you reach the bottom.
- Mix all the seasonings in a bowl.
- Drizzle olive oil over the Sweet Potato and in between the slits.
- Sprinkle generously with the seasonings.
- Place on a piece of foil and bake in the oven at 180C / 350F for about 30 minutes, or until Sweet Potato is tender when poked.
- Remove from oven and brush with melted butter.
- Garnish with fresh thyme.
- Serve with sour cream and enjoy!!
