Dough:
- 2 cups self-raising flour
- 1 cup Greek yogurt (unsweetened, plain)
- 1/2 tsp dried Italian herbs (Optional)
- 1 tsp olive oil (Optional)

Instructions
- Mix flour, yogurt, herbs, and olive oil into a rough dough.
- Knead lightly until it comes together. Don’t overwork it.
- Chill in the fridge for 15 minutes.
- Preheat oven to 200°C (400°F). Spray a pizza pan with cooking spray.
- Roll out the dough into a circle or rectangle (no need for perfection).
- Bake the base for 8–10 minutes until it firms up slightly.
- Spread tomato passata evenly, then sprinkle with thyme.
- Scatter over ham, pineapple, mushrooms, and spring onion.
- Top with mozzarella, cheddar, and oregano.
- Bake another 12–15 minutes (depending on your oven and crispness required) until the cheese melts and the crust turns golden.
- Slice and serve while hot.
