Ingredients

Units Scale

Dough:

  • 2 cups self-raising flour
  • 1 cup Greek yogurt (unsweetened, plain)
  • 1/2 tsp dried Italian herbs (Optional)
  • 1 tsp olive oil (Optional)

Toppings (all chopped):

  • 1/2-3/4 cup Italian tomato passata (enough to lightly cover the base)
  • 1 cup smoked pepper ham
  • 1 cup fresh pineapple
  • 1/2 cup mushrooms
  • 2 spring onions
  • 1 cup mozzarella cheese, grated
  • 1/2 cup cheddar cheese, grated
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme

Instructions

  1. Mix flour, yogurt, herbs, and olive oil into a rough dough.
  2. Knead lightly until it comes together. Don’t overwork it.
  3. Chill in the fridge for 15 minutes.
  4. Preheat oven to 200°C (400°F). Spray a pizza pan with cooking spray.
  5. Roll out the dough into a circle or rectangle (no need for perfection).
  6. Bake the base for 8–10 minutes until it firms up slightly.
  7. Spread tomato passata evenly, then sprinkle with thyme.
  8. Scatter over ham, pineapple, mushrooms, and spring onion.
  9. Top with mozzarella, cheddar, and oregano.
  10. Bake another 12–15 minutes (depending on your oven and crispness required) until the cheese melts and the crust turns golden.
  11. Slice and serve while hot.
