Description

A simple pot of Herb Curry with Spinach or Swiss Chard brings warmth and spice to the table. Hearty greens have never tasted so good.


Ingredients

Units Scale
  • 3 cups chopped Swiss chard or spinach
  • 2 tbsp masala (your favorite blend)
  • 1/4 tsp turmeric powder
  • Salt, to taste
  • 4 cloves garlic, crushed
  • 3 dried red chilies
  • 1 onion, chopped
  • 2 tbsp water
  • 1-2 tbsp oil (for sautéing)

Instructions

  1. Heat the oil in a pot.
  2. Toss in the onions and garlic, and sauté until the onions go soft and translucent.
  3. Add the dried red chilies and stir for a few seconds to wake them up.
  4. Pile in the spinach or Swiss chard, cover, and let it steam for about 5 minutes. Don’t freak out when it shrinks, it’s supposed to.
  5. Stir in the masala, turmeric, and salt.
  6. Add about 2 tablespoons of water to keep things moving.
  7. Cover again and cook on low until the water dries up, and the curry is thick and fragrant.
