Description
A simple pot of Herb Curry with Spinach or Swiss Chard brings warmth and spice to the table. Hearty greens have never tasted so good.

- 3 cups chopped Swiss chard or spinach
- 2 tbsp masala (your favorite blend)
- 1/4 tsp turmeric powder
- Salt, to taste
- 4 cloves garlic, crushed
- 3 dried red chilies
- 1 onion, chopped
- 2 tbsp water
- 1-2 tbsp oil (for sautéing)
Instructions
- Heat the oil in a pot.
- Toss in the onions and garlic, and sauté until the onions go soft and translucent.
- Add the dried red chilies and stir for a few seconds to wake them up.
- Pile in the spinach or Swiss chard, cover, and let it steam for about 5 minutes. Don’t freak out when it shrinks, it’s supposed to.
- Stir in the masala, turmeric, and salt.
- Add about 2 tablespoons of water to keep things moving.
- Cover again and cook on low until the water dries up, and the curry is thick and fragrant.
