Ingredients

Units Scale

Dough:

  • 500g strong white bread flour
  • 1 tsp salt
  • 7g sachet fast-acting yeast
  • 40g unsalted butter (plus extra for greasing)
  • 250ml milk
  • 1 egg
  • Veg oil for greasing

Filling:

  • 1/4 cup melted butter
  • 1 tbsp ground cinnamon
  • 2 tbsp sugar

Glaze:

  • 1 tbsp apricot jam
  • Splash of water

Instructions

  1. In a large bowl, mix the flour and salt.
  2. Make a well in the center and add the yeast.
  3. Warm the milk and butter in a pan until the butter melts and the liquid is lukewarm.
  4. Pour into the flour, add the egg, and stir until you’ve got a soft dough.
  5. Knead on a lightly oiled surface for 5 minutes until smooth and stretchy.
  6. Place in an oiled bowl, cover with a damp tea towel, and let rise until doubled, about 1 hour.
  7. Roll the dough into a rectangle (30x20cm). Brush with melted butter and sprinkle with cinnamon sugar.
  8. Roll it up tightly from the long edge, then cut into slices about 4cm thick.
  9. Arrange in a greased roasting pan, cut side up.
  10. Cover and let rise again for 30–60 minutes.
  11. Bake at 180°C for 25–30 minutes until golden brown.
  12. Warm the jam with a splash of water and brush it over the rolls while hot.
  13. Cool slightly before serving.
