Description
Dinner last night was fillet steak, grilled halloumi, corn & eggplant salad served with a classic Argentinian chimichurri sauce.

- 1 Bunch Flat Leaf Parsley
- 1 Bunch Coriander
- 3 Cloves Garlic
- 1 Tablespoon Fresh/Dried Oregano
- 1/2 cup Olive Oil
- 1 Teaspoon Lemon Zest
- 1/3 cup Red Wine Vinegar
- 1/2 Teaspoon Red Chillies Flakes
- Salt to taste
Instructions
- Add parsley, coriander, garlic, and oregano into a food processor and pulse until fine.
- Pour in olive oil and vinegar and stir.
- Season well and add in lemon zest and chili flakes.
- Enjoy!!
