Description
A super soft and creamy coconut treat infused with elatchi/cardamom and topped with sprinkles for a festive mood.

- 6 cups desiccated coconut.
- 1/2 cup Nestle dessert cream
- 1/2 cup condensed milk
- 2 tsp elatchi powder/cardamom
- Few drops of green/pink food coloring
- 1 1/3 cups normal white sugar
- 1 cup water
Instructions
- Boil the water and sugar together in a pot until it reaches 102C/ 215F on the sugar thermometer.
- While the syrup is boiling prepare the mixture.
- In a large bowl, mix the coconut and elatchi/cardamomΒ powder.
- Add the dessert cream and condensed the milk and mix.
- Add the food coloring and mix so that the coloring coats all the coconut.
- When the syrup reaches the correct temperature, pour it into the coconut mixture.
- Using your hands, mix well so that the mixture is nice and sticky.
- Line a baking dish with grease-proof paper and evenly spread your mixture into your dish.
- Smooth the top so that everything is level.
- Use a fork and rake the top of your mixture to create a rough looking texture.
- Sprinkle and cover with 100’s and 1000’s for a nice bright and colorful look.
- Cling wrap the entire dish and pop it into the fridge to set it overnight.
- Once set, cut into desired shapes.
