Indian Style Coconut Ice

A super soft and creamy coconut treat infused with elatchi/cardamom and topped with sprinkles for a festive mood.


Units Scale
  • 6 cups desiccated coconut.
  • 1/2 cup Nestle dessert cream
  • 1/2 cup condensed milk
  • 2 tsp elatchi powder/cardamom
  • Few drops of green/pink food coloring
  • 1 1/3 cups normal white sugar
  • 1 cup water


  1. Boil the water and sugar together in a pot until it reaches 102C/ 215F on the sugar thermometer.
  2. While the syrup is boiling prepare the mixture.
  3. In a large bowl, mix the coconut and elatchi/cardamomΒ powder.
  4. Add the dessert cream and condensed the milk and mix.
  5. Add the food coloring and mix so that the coloring coats all the coconut.
  6. When the syrup reaches the correct temperature, pour it into the coconut mixture.
  7. Using your hands, mix well so that the mixture is nice and sticky.
  8. Line a baking dish with grease-proof paper and evenly spread your mixture into your dish.
  9. Smooth the top so that everything is level.
  10. Use a fork and rake the top of your mixture to create a rough looking texture.
  11. Sprinkle and cover with 100’s and 1000’s for a nice bright and colorful look.
  12. Cling wrap the entire dish and pop it into the fridge to set it overnight.
  13. Once set, cut into desired shapes.
