Description

Make this Italian Wedding Soup with homemade meatballs, colorful vegetables, and spinach, and orzo pasta that will be loved by the whole family.


Ingredients

Soup

  • 1 Large Onion (diced)
  • 2 Stalks of Celery (diced)
  • 2 Large Carrots (diced)
  • 4-5 Cloves Garlic (minced)
  • 1 Bag of Baby Spinach
  • 1 liter of Vegetable Stock
  • Salt & Pepper to taste
  • 1 cup (250 ml) Orzo (uncooked)
  • 1 Bunch of Dill (chopped)
  • Extra Parmesan (garnish)

Instructions

  1. Combine all the meatball ingredients together and shape.
  2. Heat olive oil and brown meatballs.
  3. Set aside.
  4. In the same pan, add the onion, carrots, and celery and cook till soft.
  5. Add in garlic, salt, pepper, and dill.
  6. Cook for about 5 minutes.
  7. Pour in the stock and bring to a boil.
  8. Add in the pasta and meatballs and cook till pasta is tender and meatballs are fully cooked.
  9. Stir in the spinach and turn off the heat.
  10. Garnish with parmesan and enjoy!!
  11. Usually made with a mix of beef & pork but you could use your choice of ground meat.
