Description

A bold, savory twist on breakfast (or any meal), packed with flavor and protein.


Ingredients

  • 6 eggs
  • 1 stalk kale
  • 4 young asparagus spears
  • 5-6 spring onions
  • 1/2 to 1 cup grated cheddar
  • 1/2 to 3/4 cup chopped biltong
  • Your favorite spices (go easy on the salt - biltong brings its own!)
  • 1/2 tsp basil pesto (optional but tasty). Try this homemade Pesto

Instructions

  1. Crack the eggs into a bowl and whisk them.
  2. Chop the kale, asparagus, onions, and biltong.
  3. Stir everything into the eggs, along with the cheese, spices, and pesto.
  4. Grease two ramekins, pour in the mixture, and top with a few extra pieces of biltong if you’ve got more.
  5. Bake at 400°F until golden and set.
