- 6 eggs
- 1 stalk kale
- 4 young asparagus spears
- 5-6 spring onions
- 1/2 to 1 cup grated cheddar
- 1/2 to 3/4 cup chopped biltong
- Your favorite spices (go easy on the salt - biltong brings its own!)
- 1/2 tsp basil pesto (optional but tasty). Try this homemade Pesto
Instructions
- Crack the eggs into a bowl and whisk them.
- Chop the kale, asparagus, onions, and biltong.
- Stir everything into the eggs, along with the cheese, spices, and pesto.
- Grease two ramekins, pour in the mixture, and top with a few extra pieces of biltong if you’ve got more.
- Bake at 400°F until golden and set.
