Ingredients

Units Scale
  • 70 g Cauliflower florets, feel free to use frozen cauliflower, 1/2 cup
  • 10 g Olive Oil, 2 tsp
  • 2 Medium Eggs
  • A dash of Salt
  • A dash of Ground Black Pepper
  • 14 g Heavy Cream, 36% fat, 1 tbsp
  • 14 g shredded Mozzarella Cheese, whole-milk, 2 tbsp,
  • 1 g chopped fresh Parsley, 1 tsp
  • 3 g minced Garlic, 1 clove
  • 2 Dashes of dried Oregano

Instructions

  1. Heat a little bit of olive oil in a frying pan.
  2. When it’s hot, add cauliflower pieces and cook until they’re soft.
  3. Sprinkle some salt and pepper on top. Set the cauliflower aside.
  4. In a bowl, whisk the eggs and mix in some heavy cream. This makes the omelet creamy
  5. Add the rest of the olive oil to the pan.
  6. Add a little garlic and fry it for about one minute.
  7. Pour in the egg mixture.
  8. As the eggs start to cook, gently push the edges to the center with a spatula.
  9. Tilt the pan so the runny egg spreads out and cooks evenly.
  10. Stop stirring when it’s mostly set and let it cook into an omelet shape.
  11. Put the cooked cauliflower and mozzarella cheese on top.
  12. Cook until the cheese melts. Sprinkle some dried oregano for extra flavor
  13. Slide the omelet onto a plate. Add some fresh parsley on top for decoration.
  14. Enjoy your tasty cauliflower omelet
