- 1/2 cup chopped (15 g) Spinach (feel free to use frozen spinach)
- 3 tbsp (22 g) Almond Flour
- 1 medium Egg
- 1/5 tsp (1 g) Baking Powder
- 1 tbsp (10 g) Heavy Cream, 36% fat
- 1 pinch Salt
- 1 pinch of Ground Black Pepper
- 2 tbsp (35 g) Greek Yogurt, 4% fat
- 2 tsp (9 g) Olive Oil
Instructions
- Whisk/beat the egg with the heavy cream using a fork in a deep bowl.
- Add baking powder, almond flour, salt, ground black pepper, and mix well.
- Carefully stir in the chopped spinach leaves.
- Adjust the seasoning to your taste or use your favorite spices instead.
- Heat the olive oil in a frying pan over medium heat.
- Pour a little bit of batter into the pan to form pancakes.
- Cook for a few minutes on each side, until the pancakes become lightly golden on the sides.
- Serve the pancakes with Greek yogurt.
- Garnish with fresh herbs or sprouts of your choice and enjoy!
