Ingredients

  • 1/2 cup chopped (15 g) Spinach (feel free to use frozen spinach)
  • 3 tbsp (22 g) Almond Flour
  • 1 medium Egg
  • 1/5 tsp (1 g) Baking Powder
  • 1 tbsp (10 g) Heavy Cream, 36% fat
  • 1 pinch Salt
  • 1 pinch of Ground Black Pepper
  • 2 tbsp (35 g) Greek Yogurt, 4% fat
  • 2 tsp (9 g) Olive Oil

Instructions

  1. Whisk/beat the egg with the heavy cream using a fork in a deep bowl.
  2. Add baking powder, almond flour, salt, ground black pepper, and mix well.
  3. Carefully stir in the chopped spinach leaves.
  4. Adjust the seasoning to your taste or use your favorite spices instead.
  5. Heat the olive oil in a frying pan over medium heat.
  6. Pour a little bit of batter into the pan to form pancakes.
  7. Cook for a few minutes on each side, until the pancakes become lightly golden on the sides.
  8. Serve the pancakes with Greek yogurt.
  9. Garnish with fresh herbs or sprouts of your choice and enjoy!
