Description

This lemon flan is smooth, creamy, and full of citrus flavor. With a buttery biscuit crust and a bright lemony filling, it’s perfect with coffee, tea, or just a spoon straight from the fridge.


Ingredients

Scale
  • 125g digestive biscuits, crushed
  • 56g melted butter
  • 1 tablespoon sugar
  • 140ml whipped cream
  • 1 tin sweetened condensed milk
  • Grated rind of 2 lemons
  • Juice of 2 lemons

Instructions

  1. Mix the crushed biscuits, melted butter, and sugar together.
  2. Press into a flan dish to form the crust.
  3. Bake at 350°F (180°C) for 8 minutes. Let it cool.
  4. In a bowl, mix the whipped cream and condensed milk.
  5. Stir in the grated lemon rind.
  6. Slowly add the lemon juice, mixing gently. It’ll start to thicken.
  7. Pour into the cooled crust.
  8. Chill in the fridge until firm.
  9. Slice it up and serve cold.

Light, tangy, and incredibly easy, you’ll want to make it again!
