Description
This lemon flan is smooth, creamy, and full of citrus flavor. With a buttery biscuit crust and a bright lemony filling, it’s perfect with coffee, tea, or just a spoon straight from the fridge.

- 125g digestive biscuits, crushed
- 56g melted butter
- 1 tablespoon sugar
- 140ml whipped cream
- 1 tin sweetened condensed milk
- Grated rind of 2 lemons
- Juice of 2 lemons
Instructions
- Mix the crushed biscuits, melted butter, and sugar together.
- Press into a flan dish to form the crust.
- Bake at 350°F (180°C) for 8 minutes. Let it cool.
- In a bowl, mix the whipped cream and condensed milk.
- Stir in the grated lemon rind.
- Slowly add the lemon juice, mixing gently. It’ll start to thicken.
- Pour into the cooled crust.
- Chill in the fridge until firm.
- Slice it up and serve cold.
