  1. Beat butter and sugar until light and fluffy.
  2. Add egg, vanilla essence, and lemon juice and beat.
  3. Once fully mixed, add lemon rind and baking powder and mix.
  4. Lastly, add the flour and milk alternately until creamy.
  5. Pour into a greased loaf pan and bake at 160°C/320°F for approximately 1 hour.
