- 1/2 cup soft butter (Butter is best for this cake)
- 1 cup castor sugar
- 2 eggs
- 1 tbsp. Lemon rind
- 1 tbsp. Fresh lemon juice
- 1 tsp. Vanilla extract
- 2 tsp. Baking powder
- 2 cups flour
- 1 cup milk
Instructions
- Beat butter and sugar until light and fluffy.
- Add egg, vanilla essence, and lemon juice and beat.
- Once fully mixed, add lemon rind and baking powder and mix.
- Lastly, add the flour and milk alternately until creamy.
- Pour into a greased loaf pan and bake at 160Β°C/320Β°F for approximately 1 hour.
