Description

Ingredients

Dough

  • 400g (approx) - 3 1/2 cups cake flour
  • 2.5 ml - 1/2 tsp salt
  • 50 ml sugar
  • 10 g - 1 pkt yeast
  • 60 g melted butter or margarine
  • 1 extra large egg, lightly beaten
  • 150 ml of lukewarm milk
  • 50 ml lukewarm water

Filling and Topping

  • Jam of your choice
  • Whipped cream
  • 12 cherries
  • Icing sugar for dusting
  • Oil for deep frying

Instructions

  1. Add 3 1/2 cups cake flour, 1/2 tsp salt, 50 ml sugar, and 1 pkt (10 g) yeast to a large mixing bowl.
  2. Stir the dry ingredients together so the yeast is evenly distributed.
  3. Add 60 g melted butter or margarine, 1 extra large egg lightly beaten, 150 ml lukewarm milk, and 50 ml lukewarm water.
  4. Mix everything until a soft dough forms. If the dough feels slightly sticky, don’t panic; it should still feel soft and pliable.
  5. Knead the dough for about 10 minutes until smooth and elastic.
  6. You can knead it by hand or use a mixer with a dough hook.
  7. Place the dough on a lightly floured surface.
  8. Cover it with greased cling wrap and leave it to rise for about 15 minutes, or until it starts to become puffy.
  9. Gently knock down the dough and divide it into 12 equal portions.
  10. Roll each portion into a ball, then shape each ball into a small log by gently rubbing it between lightly oiled hands.
  11. Place the shaped donuts on a tray, cover lightly, and leave them to rise until doubled in size. This extra rise helps create that soft, airy texture.
  12. Heat oil over medium heat. Deep-fry the donuts until golden brown on both sides, turning carefully so they cook evenly.
  13. Avoid cooking at very high heat, as the outside can brown before the centre is fully cooked.
  14. Remove the donuts from the oil and place them on a paper towel to drain. Allow them to cool completely before filling.
  15. Slice each donut down the middle without cutting all the way through.
  16. Add a line of jam inside, then pipe whipped cream into the opening.
  17. Top each donut with a cherry and finish with a light sprinkle of icing sugar before serving.
