Mini Fresh Cream Donuts with Jam and Whipped Cream Filling for a Homemade Bakery Treat
These Mini Fresh Cream Donuts with Jam and Whipped Cream Filling are soft, fluffy little treats made with a lightly sweet yeast dough and a delicious creamy centre. Theyβre perfect for afternoon tea, celebrations, or whenever youβre craving a bakery-style doughnut at home.
Additional information
- Can I fill these before frying? No. These donuts are fried first, cooled completely, then filled. Adding cream before frying would not work because the filling would leak and interfere with the cooking process.
- Why does my donut feel heavy? The most common reasons are: Dough did not rise enough; Oil was too hot, cooking the outside too quickly; Too much flour was added during shaping.
- Can I make these without yeast? You can make a different style of donut without yeast, but this recipe relies on yeast for its soft, airy texture.
- Can I prepare these ahead? Yes. The donuts can be fried ahead and filled shortly before serving for the freshest texture.
- What type of cream should I use? Whipped cream made from fresh whipping cream works best because it holds its shape and gives a lighter filling.
- Can I use different fillings? Yes. You can customize them with custard, chocolate spread, lemon curd, or different jam flavours.
- Can these Mini Fresh Cream Donuts be frozen? Yes, but freeze them before filling. Allow the fried donuts to cool completely, place them in an airtight container or freezer bag, and freeze for up to 2 months. Thaw at room temperature, then fill with jam and whipped cream before serving.
- How long can these be stored, and how? Unfilled donuts can be stored in an airtight container at room temperature for 1 to 2 days. Once filled with whipped cream, store them in the refrigerator and enjoy within 24 hours for the best texture.
Ingredient Substitute Suggestions
- Cake flour: Use all-purpose flour with a small adjustment for a slightly firmer texture.
- Butter or margarine: Use whichever you prefer. Butter gives a richer flavour.
- Milk: Dairy-free milk can be used if needed.
- Jam: Replace with any flavour you enjoy, such as strawberry, raspberry, apricot, or blueberry.
- Whipped cream: Try pastry cream, chocolate cream, or a flavoured whipped cream for variety.

Description
TheseΒ Mini Fresh Cream Donuts with Jam and Whipped Cream Filling are soft homemade yeast donuts with a sweet centre of jam and fluffy cream. These bite-sized treats are perfect for afternoon tea, celebrations, and weekend baking.
Ingredients
Dough
- 400g (approx) – 3 1/2 cups cake flour
- 2.5 ml – 1/2 tsp salt
- 50 ml sugar
- 10 g – 1 pkt yeast
- 60 g melted butter or margarine
- 1 extra large egg, lightly beaten
- 150 ml of lukewarm milk
- 50 ml lukewarm water
Filling and Topping
- Jam of your choice
- Whipped cream
- 12 cherries
- Icing sugar for dusting
- Oil for deep frying
Instructions
- Add 3 1/2 cups cake flour, 1/2 tsp salt, 50 ml sugar, and 1 pkt (10 g) yeast to a large mixing bowl.
- Stir the dry ingredients together so the yeast is evenly distributed.
- Add 60 g melted butter or margarine, 1 extra large egg lightly beaten, 150 ml lukewarm milk, and 50 ml lukewarm water.
- Mix everything until a soft dough forms. If the dough feels slightly sticky, donβt panic; it should still feel soft and pliable.
- Knead the dough for about 10 minutes until smooth and elastic.
- You can knead it by hand or use a mixer with a dough hook.
- Place the dough on a lightly floured surface.
- Cover it with greased cling wrap and leave it to rise for about 15 minutes, or until it starts to become puffy.
- Gently knock down the dough and divide it into 12 equal portions.
- Roll each portion into a ball, then shape each ball into a small log by gently rubbing it between lightly oiled hands.
- Place the shaped donuts on a tray, cover lightly, and leave them to rise until doubled in size. This extra rise helps create that soft, airy texture.
- Heat oil over medium heat. Deep-fry the donuts until golden brown on both sides, turning carefully so they cook evenly.
- Avoid cooking at very high heat, as the outside can brown before the centre is fully cooked.
- Remove the donuts from the oil and place them on a paper towel to drain. Allow them to cool completely before filling.
- Slice each donut down the middle without cutting all the way through.
- Add a line of jam inside, then pipe whipped cream into the opening.
- Top each donut with a cherry and finish with a light sprinkle of icing sugar before serving.

I am trying to make something like this with my girls on Sunday, assuming they cooperate.
I will reblog this if I can make it first. I have always wanted to make doughnuts.
Perfect and thank you for reblogging. I loved and enjoyed eating them, but as we prefer to stay away from deep oil prepared foods, this is a no no for me.
Me too. Need to have guests.
