Mushroom and Spinach Pilaf

Description

This Mushroom and Spinach Pilaf will kick your rice dish up a notch  It’s full of fragrant flavors and will compliment any meal. 


Ingredients

Units Scale
  • 1 cup White Rice
  • 2 1/2 cups Mushrooms
  • 1 Large Onion
  • 23 Cloves Garlic (grated)
  • 2 cups Spinach (wilted)
  • Salt & Pepper to taste
  • 2 tsp. Turmeric Powder
  • 2 Bay Leaves
  • 1 Whole Cinnamon Stick
  • 7 Tbsp. Butter
  • 2 tbsp. Avocado/Olive Oil
  • 2 1/2 cups Vegetable Stock/Broth (approx.)
  • Knobs of Butter (optional)

Instructions

  1. Cook the onion and mushroom in the butter and oil until soft.
  2. Stir in the garlic and seasoning and spices and cook for a minute then add in the rice and stir well.
  3. Pour the stock/broth into the pan.
  4. Cover and cook on low heat for about 20 minutes or until the stock is absorbed and the rice is tender.
  5. You may add more stock if needed.
  6. Stir in the spinach and fluff lightly with a fork.
  7. Dot with knobs of butter before serving.
  8. Enjoy!!
