- 3 ripe bananas
- 1 tsp baking soda
- 1/4 cup butter or margarine
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups flour
- Pinch of salt
- 1/2 cup chopped walnuts (optional, but so good)
Instructions
- Set your oven to 325°F/162°C.
- Grease a loaf pan and line it with wax paper (makes it easy to pull out later).
- In a small bowl, mash up those bananas and mix in the baking soda.
- Let it sit, it’ll puff up a little.
- In a larger bowl, beat the butter, sugar, egg, and vanilla together until smooth.
- Stir in the banana mixture.
- Add flour and salt. Mix just until it all comes together.
- Fold in walnuts if using.
- Pour it into your prepared pan and bake for ±1 hour.
- It’s done when a toothpick comes out clean.
- Let it cool (if you can wait), slice it up, and try not to eat the whole loaf in one go.
