Description

Bread:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup castor sugar
- 1 egg, room temperature
- 1 cup milk
- 2 teaspoons vanilla extract
- 1/3 cup plain Greek yogurt or sour cream
Cinnamon Swirl:
- 1/3 cup muscovado or regular sugar
- 2 teaspoons cinnamon
- 2 tablespoons butter, melted and cooled
Glaze:
- 1/2 cup powdered sugar
- 2-3 teaspoons cream or milk (for consistency)
Instructions
- Preheat oven to 180°C (350°F). Grease or spray a glass loaf tin.
- In a bowl, whisk flour, baking powder, salt, and sugar. Set aside.
- In another bowl, whisk egg, milk, vanilla, and yogurt (or sour cream).
- Stir in the dry ingredients just until combined. Pour batter into loaf pan.
- Mix the swirl ingredients in a small bowl.
- Drop spoonfuls over the batter and gently swirl with a knife. Don’t overmix.
- Bake 40–50 minutes, until a toothpick comes out clean.
- Cool 15 minutes in the pan, then transfer to a wire rack to cool completely.
- For glaze, whisk powdered sugar with milk or cream until smooth.
- Drizzle over cooled bread.
