Description

Moist, sweet banana bread with a hint of lemon and a nutty almond crunch.

Instructions

  1. Preheat oven to 170Β°C (340Β°F).
  2. Spray a loaf tin with cooking spray.
  3. Melt butter and sugar together.
  4. Add bananas and mash well.
  5. Using an electric beater, beat in eggs one at a time.
  6. Stir in vanilla extract and lemon rind.
  7. Add 1 cup flour and half the milk. Mix well.
  8. Fold in almond nibbles.
  9. Add remaining flour and milk.
  10. Beat on high until smooth and combined.
  11. Pour into the prepared loaf tin.
  12. Bake for 40 minutes, or until a tester comes out clean.
  13. Let cool slightly before slicing.
