Description
Moist, sweet banana bread with a hint of lemon and a nutty almond crunch.

- 125 g butter
- 1 cup caster sugar
- 2 ripe bananas
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp grated lemon rind
- 2 cups self-raising flour
- 1 cup milk
- 2 tbsp almond nibbles
Instructions
- Preheat oven to 170Β°C (340Β°F).
- Spray a loaf tin with cooking spray.
- Melt butter and sugar together.
- Add bananas and mash well.
- Using an electric beater, beat in eggs one at a time.
- Stir in vanilla extract and lemon rind.
- Add 1 cup flour and half the milk. Mix well.
- Fold in almond nibbles.
- Add remaining flour and milk.
- Beat on high until smooth and combined.
- Pour into the prepared loaf tin.
- Bake for 40 minutes, or until a tester comes out clean.
- Let cool slightly before slicing.
