125 gr butter
1 cup castor sugar
2 ripe bananas
1 tsp vanilla extract
1 tsp grated lemon rind
2 cups self raising flour
1 cup milk
2 TB almond nibbles (Just because they were there)
Preheat oven to 170 degrees.
Melt butter and sugar.
Add bananas and mash well.
Using electric beater beat in eggs one at a time.
Add vanilla extract and lemon rind.
Add 1 cup flour and mix adding half the milk.
Add the nibbles. Mix.
Add the remaining flour and Mix.
Add remaining milk and mix on high ensuring that everything well combined.
Spray a loaf tin with cooking spray.
Pour batter into tin and bake for 40 minutes
