Orzo Pasta Salad loaded with texture, flavor, and not a hint of boring
Ingredients
Scale
- 1/2 to 3/4 bag of orzo pasta
- Veggie stock (to cook the orzo)
- 2 big heads of broccoli
- 1/2 to 1 red bell pepper
- 3-4 celery stalks
- 1 bunch of spring onions
- 1/4 cup sunflower seeds
- 1/4 cup capers
- 1/4 cup mixed dried berries (like cranberries, blueberries, or raisins)
Instructions
- Boil the orzo in veggie stock (adds great flavor).
- Once it’s done, rinse it under cold water and drain really well.
- Cut broccoli, red pepper, celery, and spring onions into small, bite-size pieces.
- In a big bowl, toss the cooked orzo with the chopped veggies, sunflower seeds, capers, and dried berries.
- Pour your favorite salad dressing over the top and mix it all together.

Fig balsamic dressing takes it to the next level and is my all-time favorite
