Description

This easy bow tie pasta salad is fresh, tangy, and loaded with peppers and peppadews. A quick, colorful side dish that’s perfect for BBQs, picnics, or weekend meals.


Ingredients

Pasta

  • 1/2 packet bow tie pasta (about 250g)
  • 1/4 each green, yellow, and red bell peppers, diced
  • 1 clove garlic, minced
  • 1 small red chili, chopped (optional)
  • 1/2 small onion, finely diced
  • Salt, to taste
  • 4 peppadews or red pimentos, sliced (plus extra for garnish)
  • Pinch of cayenne pepper, for garnish
4–6 cheese Griller sausages, grilled and sliced (optional but highly recommended)

Vinaigrette Dressing:


Instructions

  1. Cook pasta in salted water until al dente.
  2. Drain, rinse under cold water, and set aside.
  3. In a large bowl, toss pasta with peppers, onion, garlic, and chili.
  4. Season with salt if needed.
  5. In a separate bowl, whisk together dressing ingredients until smooth and balanced.
  6. Taste and adjust sugar/lemon to your liking.
  7. Pour the dressing over the salad and toss gently.
  8. Garnish with peppadews and cayenne.
  9. Chill at least 30 minutes before serving.
  10. Add grilled cheese sausages on the side for a full meal.
