Ingredients
Pasta
- 1/2 packet bow tie pasta (about 250g)
- 1/4 each green, yellow, and red bell peppers, diced
- 1 clove garlic, minced
- 1 small red chili, chopped (optional)
- 1/2 small onion, finely diced
- Salt, to taste
- 4 peppadews or red pimentos, sliced (plus extra for garnish)
- Pinch of cayenne pepper, for garnish
Vinaigrette Dressing:
- 2 tbsp olive oil
- 2 tbsp white vinegar
- Juice of 1/2 lemon (adjust to taste)
- 1 tsp mustard powder
- 1 tsp sugar (adjust if too tangy)
- Salt and black pepper, to taste
Instructions
- Cook pasta in salted water until al dente.
- Drain, rinse under cold water, and set aside.
- In a large bowl, toss pasta with peppers, onion, garlic, and chili.
