Description
Peanut Butter Cookies with oats make a simple treat anyone can bake.
Ingredients

- 1/2 cup chunky peanut butter (smooth works too—that’s what I used!)
- 1/2 cup Demerara sugar
- 1 extra-large egg
- 1 1/4 cups steel-cut oats
- 3/4 teaspoon baking soda
Instructions
- Set your oven to 350°F/180°C and line a baking sheet with parchment paper.
- In a bowl, beat the peanut butter and sugar with a hand mixer until it looks light and fluffy.
- Add the egg and mix again.
- Stir in the oats and baking soda.
- The dough will feel crumbly; use your hands to knead it into a solid ball. It will come together.
- Roll the dough into 2-inch balls and flatten them right on the baking sheet.
- Bake for 8–10 minutes, until the edges start to brown.
- Let them cool on a wire rack.
- Once cool, keep them in an airtight container, if they last that long.
These are chewy, nutty, and insanely good straight from the oven.
