Pork and Kale on a Cheese Scone to try for your next weekend lunch
Scones:
Ingredients:
3 1/2 cups flour
2 teaspoons baking powder
Salt, if desired
150 mL butter, melted
4 cloves garlic, finely diced
1 tablespoon onion powder
2 cups cheese, grated
2 cups milk
Method:
Preheat oven to 375°F and line 2 baking sheets with parchment.
Sift dry ingredients together, then mix the melted butter through until it resembles coarse crumbs.
Add garlic, onion powder, and cheese and combine.
Make a well in the center and pour milk into it.
Mix gently until just combined – don’t overmix.
Divide the mixture into 10 large biscuits and bake for 25 minutes or until they just start to brown on top.
While they bake, saute sliced onion in butter.
Add about 1 1/2 cups ground pork and brown slightly.
Add 2 tablespoons soy sauce, 1 teaspoon Italian seasoning, 1 teaspoon onion powder, and pepper to taste.
Continue cooking until well browned.
Add 1 bushel of finely chopped kale, mix through, and remove from the heat right away.
To serve, top a sliced biscuit with a generous spoonful of the pork, sliced tomatoes, thinly sliced onion, and lettuce.
Also delicious with a dash of HP Sauce.
