How to Cook Pork Medallions in Oven

Ingredients

Units Scale
  • 600g Pork Tenderloin
  • Salt
  • Pepper
  • 1 small sliced onion
  • 1 clove sliced garlic
  • 24 tbs low sodium, low-fat beef broth
  • 1 fresh lemon

Instructions

  1. Preheat over to 375F / 190C
  2. Slice pork and pound with a meat mallet (preferably between two sheets of plastic wrap) or a small skillet until ± 1/8″ thick
  3. Cut pork into 8 equal pieces and sprinkle with salt and pepper
  4. Cover the bottom of a non-stick frying pan with the onion and garlic
  5. Add the broth and cook over medium heat until it turns to a caramel color
  6. Place the pork on top of the onions and garlic and cook in the oven for ± 10 minutes.
  7. Turn after 5 minutes.
  8. I you wish you can remove the onion and garlic but leave the juices in the pan and return the pan to the oven.
  9. Turn oven to broil and broil for an additional 5 minutes.
  10. Serve with a fresh lemon cut into slices or squares.
  11. As I do not have a pan that can go into the oven, we prepared everything in the pan.
  12. Transferred the onion and garlic to a dish, then added the meat and continued as above.
