Description

These Quick and Easy Corn Fritters are the kind of thing you throw together when you want something comforting but not fussy. The edges turn crispy, the middle stays soft, and the pops of sweet corn with red pepper make them seriously addictive.


Ingredients

  • 1 cup (250 ml) all-purpose flour
  • 1/2 tsp (2.5 ml) salt
  • 1 tsp (5 ml) paprika
  • 2 large eggs
  • 1/4 cup (60 ml) milk
  • 2 cans corn kernels, drained
  • 1 red bell pepper, chopped
  • Small handful of fresh parsley, chopped
  • 2 tbsp (30 ml) olive oil, for frying

Instructions

  1. In a medium bowl, whisk together the flour, salt, and paprika.
  2. In another bowl, whisk the eggs and milk, then stir them into the flour mixture until smooth.
  3. Fold in the corn, red pepper, and parsley.
  4. The batter will be thick and chunky, that’s what you want.
  5. Heat the olive oil in a large frying pan over medium heat.
  6. Scoop spoonfuls of batter into the pan, flattening slightly.
  7. Cook 3–4 minutes per side until golden brown and crisp.
  8. Drain on paper towels.

Serving idea: Pile them up with fried Russian sausages, green beans on the side, and creamy mashed potatoes.
