Quick ‘n Easy Strawberry and Banana Smoothie

Description

This smoothie is one of my go-to breakfasts because I can prep it the night before, stash it in the fridge, and grab it on my way out the door. It’s creamy, filling, and way more exciting than plain yogurt.


Ingredients

  • 1 tsp. Pure maple syrup
  • 1/2 cup vanilla soy milk
  • 1 banana (fresh or frozen; frozen gives you a creamier texture)
  • 6-7 strawberries (fresh or frozen - frozen makes it thicker and colder)
  • 250 ml vanilla Greek yogurt or soy yogurt
  • 125 ml milk of choice (I like vanilla or plain soy milk)
  • 5 ml pure maple syrup (optional - skip if your milk is already sweetened)
  • 15-20ml chia seeds. You can soak them overnight in 2- 3 tbsp of water (this thickens the smoothie) or add them directly to the smoothie, as they will thicken overnight.
Optional add-ins: ground flax seeds, whole psyllium husk, Goji berries, or a scoop of protein powder for extra staying power.

Instructions

  1. If you’re using chia seeds, you can soak them overnight in 2–3 tbsp water (thickens the smoothie) or just add them directly to the smoothie, as it will thicken overnight.
  2. Add all ingredients to a blender.
  3. Blend until smooth and creamy.
  4. Pour into a glass or to-go cup and leave overnight.
  5. Top with a drizzle of chocolate, caramel, or even a sprinkle of granola if you’re feeling fancy.
